"People down there." Rory leaned on the balustrade. Figures moved between the vine rows — bent, small, deliberate. They carried baskets on their backs and walked in lines, and where the lines turned they turned together. "Are those—" "Bound." Nyx's whisper flattened. "Contracted souls. Chefs, vintners, gardeners. They sign for years and pay in decades." One figure stopped mid-row and straightened. It stood motionless while the others flowed around it, then folded back into place. "They don't look chained." "That is the arrangement. Their hands remember the work and the rest of them comes along." "Move." Isolde set two fingers between Rory's shoulder blades. "The terrace is a mouth and we stand on the lip." Steps spiralled down the cliff face, cut into the rock and worn hollow at the centre by centuries of feet. "There is no other kind here." They moved between the tables. Rory's hip brushed a platter and something under the glaze shifted. She stepped wide and kept walking. Twice the fruit towers breathed and shed a skin of sweetness so thick she tasted it at the back of her throat. The thudding grew teeth. Then it stopped. Silence sat in the colonnade like poured wax. Isolde tilted her head toward the dark. "Behind the last pillar. Past the ninth table." "How do you know it's the ninth?" "The first eight are set for guests who arrive hungry. The ninth is set for a guest who arrives owing." Nyx drifted ahead of them both and folded into the pillar shadow. Rory followed with the blade low and the Heartstone hot against her breastbone. Past the ninth table the colonnade turned and opened. A kitchen. Cathedral-wide and hollow as a drum. Stoves stood in ranks down both walls, iron mouths open and breathing orange, and not one of them had a cook before it. Worktables ran the length of the floor, dusted with flour and scarred by blades, and along every table the knives moved. Blades rocked on the boards. Chopped, minced, scored. Cleavers came down on jointed meat in the same staggered pattern that had reached them in the colonnade. No hands guided them. Sleeves hung empty at the ends of the benches where aprons sat tied around nothing, and the empty sleeves twitched with the work. Rory stopped walking. "On the boards," she said. "Look at the boards." Flour dust stood up in ridges along each tabletop. Left by fingers. Small. Countless. Pressed into the flour in a repeating shape, one after another after another, the size of a child's hand. Isolde looked at the prints and said nothing at all.
